Ruth Lee's Energy Bars

1 C. Peanut Butter (chunky if you like)...melt in microwave slightly so more "mixable".
1/2 C. Honey
1 tbsp Vanilla

Stir those all together

Fold in:

2 C Old Fashioned Oats (not quick cooking)
1 C Dried Cherries
1 C Chocolate Chips (I used 1/2 DARK and 1/2 SemiSweet)

Spread in shallow pan and refrigerate 2 hours.  Cut into bars. (maybe 1.5 x 2.25 inch pieces)

Ruth Lee then wraps a few flat in foil, freezes and then she just pops out one or two as she wants them.  I cut them and placed in a sealed container with wax paper between the layers of them and just ate them out of the fridge.  YUM!!!!
